Dairy-Free Pancakes



Combine all ingredients and whisk together. Batter will be thick. Preheat pancake griddle on medium/low. Grease the griddle. Pour 1/4 cup batter onto hot griddle. Let cook until edges start to firm up. Flip and cook until golden brown. Be sure to cook thoroughly. These may take longer to cook than other pancakes.

Enjoy warm!

Chef's note:This recipe also makes Belgium Waffles (which are thick, sweet waffles sprinkled with powdered sugar). Follow recipe above, but cut 1/4 cup water, and add 1/4 to 1/2 cup sugar depending on your preference. Batter will be thick. Pour into a preheated and pre-greased waffle iron. Cook until crispy and brown. Sprinkle with powdered sugar.

    My go-to pancake recipe! They turn out with the weird perfection of a commercial buttermilk pancake recipe, and taste AMAZING. I even serve them to non-gluten-free people, and they can’t tell the difference.

    Try substituting a tablespoon of ground flaxseed for each egg and bake on parchment paper at 375 for 25 minutes. Add chocolate chips or blueberries if you like. They come out much fluffier.

    This is amazing!!! So delicious. I use coconut oil for the mix and it adds a nice crisp to the waffle.

    I added 1 very ripe banana & instead of the water, a 1/2 cup of almond milk and my family loved them!! Thank you for so many amazing recipes!

    We love these! I mix all wet ingredients first then add mix. I also add “Good Life” Dairy free chocolate chips (4 servings) and my family loves them!! THANK YOU!!

    Wow, this actually turned out pretty well. I put in cashew milk instead of water. I too added a few good life chocolate chips and used ghee instead of oil. I would definitely make these again. It took a few tries to get the temp just right on my pan, but by the end of the batches, the pancakes were coming out perfectly.

    Tried this today. We loved them! I used cashew milk w a Tbls of Vinegar per C. Also added an extra 1/4 C of the milk and the batter was still too thick for us. Will be making this again and tweaking further.
