Cranberry Coconut Oatmeal Cookies

Yield: 16 large cookies

Cranberry Coconut Oatmeal Cookies


  • 1 bag Pamela's Oatmeal Cookie & Bar Mix
  • 8 TBSP butter or butter alternative (with egg replacer, use 10 TBSP )
  • 1 egg, large (or equivalent of 2 large eggs with egg replacer)
  • 1 cup coconut flakes-unsweetened
  • 3/4 cup dried cranberries


Pre-heat oven to 350°.

Soften butter with stand mixer, add remaining ingredients and combine until fully incorporated. Drop dough in heaping TBSP onto a parchment covered or pre-greased cookie sheet.

Bake for 10 to 14 minutes. Let cool completely.

OPTION: Made only with coconut, these cookies are a delicious, crisp and delicate delight!

    I bake the bars on a Sil pat silicone pad, and form it to 8″x8″ (or larger for cookie thickness.)My husband eats one early in the morning (with coffee) before breakfast as he takes his Meds. They are so wholesome with nuts, cranberrys and chips and coconut cream in with the butter.
