Cinnamon Roll Pancakes

Ingredients

    Yield:

  • Batter
  • 3/4 cup milk
  • 2 tablespoons apple cider vinegar
  • 1 1/2 cups Pamela’s Pancake & Baking Mix
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 teaspoons butter, melted
  • 1 1/2 teaspoons vanilla extract

  • Cinnamon Swirl
  • 7 1/2 tablespoons packed brown sugar
  • 5 tablespoons of melted butter
  • 1 1/2 teaspoons ground cinnamon
Directions

    In a bowl, pour apple cider vinegar into the milk and set aside. You will want to allow the milk and apple cider vinegar to sit because this makes buttermilk and adds a punch of flavor to the batter.

    In a separate bowl, mix the dry ingredients; pancake mix, white sugar, baking powder, baking soda, and salt.

    Into the dry mix, add in egg, butter and milk. Stir until well combined. If you need to, adjust the batter as needed. If the pancake mixture is too runny, add more pancake mix, if too runny, add more milk.

    Pour the batter into the pan. Once the pancake gets bubbly, apply the cinnamon swirl mixture in a swirl motion to the batter.

    You are now able to flip the pancake. NOTE: If butter is still hot the swirl will be less thick, as the butter sets this will thicken and become easier to work with.

    Once done you can serve hot or with a powdered sugar glaze poured over the top. You can also just spread a little cream cheese icing for a treat.
