Chocolate Oreo Cake

    Oreo Cake
  • 2 eggs, large
  • 1 bag Pamela’s Chocolate Cake Mix
  • ½ cup butter, melted
  • 1 ½ cup water
  • 2 packages Oreo gluten free cookies
  • 1 pint 35% whipped cream

  • 2 egg whites
  • Pinch of salt
  • 1 tsp of vanilla
  • 1/8 tsp of creme of tarte
  • 2/3 cup of sugar
  • 1 to 2 cups Oreo crumbs

    Oreo Cake Recipe

    Preheat the oven to 350F. Whisk together eggs, oil, and water until well blended, then add the dry mix and stir to combine. Do not over-mix. Pour batter into a lightly greased baking pan. Use two 8” pans for this recipe. Remove the cake when a toothpick comes out clean. Let the cakes cool down completely on a rack.

    While the cake is baking, open the Oreo packaging, set a few Oreos aside for decoration, and place the rest in a food processor. I had to do it in two batches. Pulse multiple times to break the cookies until you get crumbs only. Transfer to a bowl and set aside.

    For the frosting, pour the cream into a heavy-duty stand mixer with the whisk attachment. Mix on medium-high until it forms peaks, fold in with a spatula about 2-3 cups of Oreo crumbs. Set it aside.

    Cut the cake horizontally using a bread knife or a string. Place the bottom part of the cake on a plate. First, add about ¼ of the frosting, and spread it evenly. Add about 2 cups of the crumbs and spread it evenly. Add the top of the cake and repeat until you get to the last piece of cake. For the top of the cake only use frosting and spread it around. And then you can do the sides.

    Decorate with Oreos and Oreo meringues, if you still have some crumbs left you can place some around the cake.

    Oreo Meringue Recipe Directions

    Preheat the oven at 300F.

    Beat the egg white with salt and the creme of tarte.

    Once it forms soft peaks, add the sugar slowly, then the vanilla and with a spatula add the Oreo crumbs.

    On a baking sheet with aluminum foil, drop 2 teaspoons of mixture and space them 1.5” apart

    Cook for 25 minutes, let it cool down.
