Spiced Pear Cake with Almond-Ginger Streusel

This is a moist cake to serve at any occasion or a great take along cake for a family get-together. Made with Pamela’s Baking & Pancake Mix, fresh grated pear flavored with pure honey, ground cinnamon and ginger.

    I made this last week for a group of friends, most of whom have been gf for decades. Every one of them asked for this recipe including the non-gf folks! It was fabulous! I used an 8×8 pan and I think it would present better in a 9" round pan. It took a long time to bake.
    Changes: all brown sugar,used some jarred ginger and the crystalized (we like strong flavors), added vanilla to batter, and realistically, I probably increased the overall amount of spice.
