Berry Oatmeal Crumble

This is an easy and delicious way to make a fresh berry dessert. Made with Pamela’s Oatmeal Cookie & Bar Mix.

Berry Oatmeal Crumble

Yield: Approximately 3 cups topping; for thick crumble on a 8 x 8-inch or 9 x 9-inch cobbler, or lighter crumble topping on a 9 x 13-inch pan

Berry Oatmeal Crumble


  • 1 bag Pamela's Oatmeal Cookie & Bar Mix (13 oz)
  • ½ cup butter, chilled and cut into ½-inch pieces
  • Filling
  • 4½ cups raspberries or other berries (except strawberries), or combination of berries
  • ⅓ cup sugar
  • 1 TBSP cornstarch
  • zest of 1 lemon


Whisk together sugar and cornstarch in a large bowl, add zest and mix lightly. Add raspberries and toss gently to completely cover the raspberries with the dry ingredients. Set aside, gently tossing occasionally to distribute the sugar and allow the fruit to start to release some juice.

Preheat oven to 375°, with rack in center position. Using food processor, stand mixer with paddle attachment, pastry cutter, or fingers, cut butter into dry mix until pea sized crumbs are formed.

Butter baking pan or individual ramekins, pile up fruit (optional: add some blueberries for extra color and flavor), sprinkle with crumble. Place parchment-lined sheet pan under to catch any bubbling overflow.

Bake for 35 to 45 minutes until fruit is bubbling and crumble is crisp and brown. Use foil if crumble is browning too much before fruit is bubbling. Allow to cool some before serving.

Extra crumble can be stored in an airtight container in refrigerator for up to three months.
