Baking With Pamela – Hearty Muffins

We kick off the new year off with our Hearty Muffins — packed with healthy ingredients, these delicious muffins will satisfy your taste buds and your New Year’s resolutions. You will need the following Pamela’s baking mixes: All-Purpose Flour Artisan Blend, and/or Nut Flour Blend, and Baking Powder.

Toast the Seeds and Nuts

½ cup walnuts, toasted and chopped (or nut of choice)
¼ cup pumpkin seeds, toasted (or seed of choice)

In a 350° oven, toast walnuts and pumpkin seeds on two ¼ sheet pans lined with parchment. After 5 minutes, stir so that they will be evenly toasted. Place back in oven for 3-5 minutes or until nuts and seeds are a few shades darker and smell nutty.

Soak raisins

¼ cup currants or raisins

If your dried fruit is fresh, you may not need to soak them, but if they seem very dry, it is nice to plump them before baking. To do this, soak the currants or raisins by covering them with boiling water. Let sit for 5-10 minutes and then drain.

Pre-heat the oven to 375° with rack in center of oven, line pan with cupcake papers and spray with cooking spray to ensure the muffins don’t stick to the papers.

Prepare the vegetables

1 cup peeled and shredded carrot
1 cup shredded yam
½ cup grated zucchini (or you can use apple or crushed and drained pineapple)
½ cup chopped spinach

Wash and dry all vegetables

Grate or chop vegetables and nuts.

The dry ingredients

1 cup Pamela’s All-Purpose Flour Artisan Blend (or, ½ cup All-Purpose Flour Artisan Blend + ½ cup Pamela’s Nut Flour Blend)
½ cup brown sugar
2 tsp cinnamon
½ tsp ginger
½ tsp allspice
1 tsp baking soda
1 tsp baking powder
½ tsp salt

Measure out all dry ingredients.

In a large bowl, whisk together dry ingredients.

Zest one orange over the flour mixture.

Add ½ cup shredded, unsweetened coconut. Also add the seeds, nuts and raisins.

Add all the grated and chopped vegetables.

Mix well so all the vegetables are coated with the flour mixture.

The wet ingredients

2 eggs, large
⅓ cup oil
2 TBSP liquid: orange juice, water, pineapple juice, milk or milk alternative

In a separate bowl or measuring cup, whisk the liquid ingredients together.

Make the batter and bake

Add the liquid ingredients to the bowl of dry ingredients. Mix until it is well-incorporated.

Scoop into prepared muffin tins.

Bake 18-25 minutes until firm or until toothpick comes out clean. Cool on a rack.
