Baking With Pamela — Garlic Bread

GARLIC BREAD

MAKE THE BAGUETTE:

Assemble ingredients:
2 cups Pamela’s Pizza Mix (320 gr.)
½ TBSP baking powder
2¼ tsp active dry yeast (7 gr.)
1 cup + 3 TBSP very warm water (100° optimum)
2 TBSP oil
more Pamela’s Pizza Mix for dusting
(or Pamela’s All-Purpose Artisan Flour Blend, rice flour or corn meal)

Whisk together in the bowl of a stand mixer:
2 cups Pamela’s Pizza Mix (320 gr.)
½ TBSP baking powder
2¼ tsp active dry yeast (7 gr.)

Add to mixer, while mixing with paddle attachment:
1 cup + 3 TBSP very warm water (100° optimum) and 2 TBSP oil, mixed together

Mix dough until smooth.

Scrape off paddle, scrape down sides to form a ball, spray with non-stick spray.

Top bowl with plastic wrap or a well-fitting plate and keep in warm spot.

Preheat oven to 475° with pizza stone in top third of the oven. Let rise to double the original size.

Gently loosen, carefully roll out of bowl onto parchment, and gently split dough in half.

Align the two pieces lengthwise to form a long baguette shape.

Lightly work the dough together in middle.

With a rubber spatula, pull up from the bottom and slightly smooth sides upwards.

Make 3 diagonal slashes with a sharp knife: cut from top, down and slightly around. Enlarge slashes with rubber spatula.

Sprinkle lightly with a little more Pizza Crust Mix over the dough. (If you do not have more Pizza Crust Mix, you can use Pamela’s All-Purpose Flour, or rice flour, or cornmeal.)

Cut excess parchment paper off, and use a pizza peel or insulated rimless cookie sheet to transfer dough to hot stone.

Bake in preheated oven for 30 to 35 minutes.

When baked, set on a cooling rack. Let cool at least 30 minutes or cool completely. If you cut the bread before it has cooled, the insides will be gummy.

MAKE GARLIC BREAD:

For one loaf:
Soften 3 TBSP butter.
Mince 3 large cloves of garlic

Mix soft butter and minced garlic together with a fork.

Slice baguette in half horizontally.

Spread garlic butter on both top and bottom pieces.

Sprinkle with 2 to 3 TBSP Parmesan cheese
and a pinch of smoked or regular paprika (optional)

Broil in a preheated oven on a parchment lined sheet pan, until butter is bubbling on top and cheese has a little color.

Slice into individual pieces and sprinkle with:
1 to 2 tsp flat-leaf parsley, finely chopped
