You can always tell it's October when you are at the Farmer's Market. Pumpkins line the vendor stalls along with bouquets of red, yellow and orange leaves. There are so many things I love about October - warm autumn days followed by brisk and cool nights (here in California), Halloween where the inner child in me comes out and I get to be anyone I want, and pumpkin-themed everything. In that spirit, I created my Pumpkin Bread Mix a few years ago. I love the taste and texture of my pumpkin bread and wanted to think of a way to turn it into a delicious morning treat to go with my hot cup of coffee. What about pumpkin combined with coffee cake? YUM! And so it was born - Pumpkin Coffee Cake - coffee cake with delicious streusel filling and the extra flavor of pumpkin, topped with pecans and toasted pumpkin seeds. Made with either my Pumpkin Bread Mix or Baking & Pancake Mix, these are recipes that anyone can follow to make delicious eats for everyone to enjoy. So easy, so pumpkiny, and so October!

Miguel – A Tribute from Pamela
On September 10th, we lost a dear friend. His name was Miguel Ramirez, and he was my Head Baker for over 25 years. Most of my career has been with him by my side. It was with Miguel who I worked with so closely to create the cookies and bars you now eat. The year was around 1990 when I first met him at 4:30 one early morning. The bakery was large and dark with the fluorescent lights casting a strange eerie glow over the large metal machinery as Miguel stood there in his bakers' whites ready for my first recipe. He was not used to owners getting up in the middle of the night to run a recipe and was surprised to see me. We started our long and comfortable relationship that very day.

We learned to appreciate each other's approach to making delicious foods– me telling Miguel what I wanted, and Miguel trying something completely different because he thought it would work. We would sit together, going back and forth tasting cookies and questioning if there was too much salt or not enough? Need more chocolate or sugar? What else can we try? Bake it more? Bake it less? I never realized how much I would miss talking to him in that strange language we developed, both of us seat-of-the-pants bakers. With a wink, I would always ask him if he knew what he was doing? He always did, he always came through, he was always there by my side.

The last time Miguel came to visit us at the bakery, he couldn't wait to go out and touch his machines, his babies. He spent so much time loving and coaxing and adjusting and caring for those machines. They were a part of his life and he was so much a part of ours and mine. He was the man we all looked up to, who always cared that we would be making more cookies tomorrow, who would be there until you made him go home.

Miguel was a family man who loved his wife, loved his family, loved his friends. And, he was loved by an entire company. He was always there to give, to help, calm and gentle, and caring. My dear friend, Miguel, you will be tremendously missed by us all.

Tip from Pamela – Boiling Pasta
To properly cook pasta, use a pot large enough for the pasta to move around freely. Before adding the pasta, make sure the water is at a rolling boil – not just a few beads at the bottom of the pot. You want your pasta to be moving around, so it cooks evenly.

What do you do at Pamela's Products and how long have you worked here? I have worked at Pamela's for 1 year now. I work in the warehouse loading/unloading trucks, but I also gather all the raw ingredients for each day's baking schedule and ensure the bakers have access to everything they need for their baking day.

What is your favorite aspect of your job here? It may sound clichι, but I love the people! We have a great team here at Pamela's, and I enjoy coming to work. I also like that each day can bring new challenges and it's not always the same routine.

Outside of work, what are your hobbies or interests? I like to relax by playing music, mostly string instruments, such as guitar and even the ukulele. I also enjoy hiking and just getting outdoors whenever I can.

What is your favorite Pamela's product and why? The Cranberry Almond Whenever bars are my favorite item. Quite frankly, they just taste good!
