Pamela and her team have been very busy preparing for this holiday season to surprise you with "12 Days of Gluten-Free Cookies". Beginning December 1 and over the course of 12 days, we will be posting one new cookie recipe every day on our website and social media outlets. Inside Pamela's Kitchen
As many of us are planning on lots of holiday baking over the next couple of months, we decided it was the perfect time to share some baking tips from Pamela herself to ensure perfect gluten-free foods every time.
  • Use an ice cream scoop when making cookies. This is an easy to use and no mess method. You can also use an ice cream scoop for batter for cupcakes. This allows for the same amount of batter for each cupcake

  • Bread pans come in glass and metal. I prefer metal for bread to make a crispier crust. I use glass for banana bread, etc. If your pan is too small, or to make a taller loaf, add a parchment collar. By greasing or spraying the inside of the pan, the collar will stick automatically so you can fill with bread dough easily.

  • I prefer insulated cookie sheets or very heavy steel sheets. Your cookies will bake up evenly without burning the bottoms. Covering them with parchment paper makes clean up a breeze. I threw my mother’s black cookie sheet away years ago!
