Celebrate Mom & Celiac Awareness this Month
May traditionally marks the last official month of spring. But, May is also the month in which we take time to honor all those mothers out there for all the love and support they have provided us over the years. This year Mother's Day falls on Sunday, May 11th, and here at Pamela's we wish all of you mothers a very special day and a big thank you for all you do! To help celebrate, we have compiled some new and some long-time favorite recipes to enjoy this month. We also have some great tips from Pamela herself to help you bake up a special Mother's Day treat.

Celiac Awareness Month is also this May. It is estimated that 83% of individuals living with celiac disease have yet to be diagnosed. Help spread the word this month about celiac disease and the testing available to make a diagnosis. We have some ideas here to help you raise awareness this month.

Tips from Pamela's Kitchen
It is no surprise that as a third generation baker and creator of all recipes and formulations for the Pamela's Products brand, Pamela has picked up a tip or two to help in her kitchen work. So, we caught up with Pamela recently and asked her for some tips she could share with all of her fans. Here are few great pieces of advice, and be sure to look for more tips in future newsletters!
  • Use a small ice cream scoop when making cookies. It is easy to use and creates less mess. You can also use an ice cream scoop to help portion out equal amounts of batter when you are making cupcakes.

  • Bread pans come in both glass and metal. Pamela prefers metal for bread to make a crispier crust and glass for banana bread and other quick breads. If your pan is too small, or to make a taller loaf, add a parchment collar. By greasing or spraying the inside of the pan, the collar will stick automatically so you can fill with bread dough easily.   • Pamela prefers insulated cookie sheets or very heavy steel sheets. These will help make your cookies bake up evenly without burning the bottoms. Pamela tossed her mother’s black cookie sheet away years ago! Covering the sheets with parchment paper makes clean up a breeze.

  • Invest in a quality griddle to ensure you make the perfect pancake. Poorly crafted pans can lead to sticking and inability to cook through. Use a heavy griddle specifically for making pancakes. Pamela likes and uses a Calphalon pancake griddle, and she ONLY uses it to prepare pancakes and nothing else.

Let's help spread the word about celiac disease and increase awareness so those with gluten-related health problems can get the help and treatment they need to live a healthier lifestyle.
  • The Celiac Disease Foundation is inviting people to take the pledge to live gluten-free for one week in May with the Team Gluten-Free Week Without Wheat (Barley and Rye). As part of the commitment you can help raise $100 in the fight against celiac disease. If you already follow a gluten-free diet, you can pledge on behalf of a family member or friend. As part of the pledge, you receive a free CDF 7-day Gluten-Free starter kit that includes a Team Gluten-Free t-shirt and handbook.

  • Share the Celiac Disease Symptoms Checklist with family and friends. Post the checklist on your social media accounts or send out via email. Many of you have shared your stories with us prior to your diagnosis, often bringing some of us to tears at the pain and suffering endured prior to the removal of gluten from your diet. Maybe you can help someone get the treatment they desperately need.

  • To help raise funds and awareness, you can create your own fundraising event. The University of Chicago Celiac Disease Center is an international organization that aims to provide education, diagnosis, treatment, and research with the goal of curing celiac disease by 2026. Their website provides a wealth of information and support services for the celiac community. The Celiac Disease Center encourages you to "…walk, run, bike, jump rope or do any other activity that interests you to raise funds for celiac disease education, research, and advocacy."
